Ingredients:

  • 3 large eggs
  • Half cup unsweetened vanilla almond milk
  • 5 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Three-quarter almond flour
  • One-quarter tapioca flour
  • Half cup unflavored whey protein powder
  • Half a teaspoon of baking soda
  • 1 teaspoon baking powder
  • One-quarter teaspoon of sea salt
  • 1 tablespoon granulated erythritol sweetener
  • Half cup frozen wild blueberries

For the frosting:

  • 2 tablespoons unsalted butter, softened
  • 3 tablespoons cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • Quarter teaspoon lemon zest
  • One-quarter powdered erythritol
  • 1 to 2 tablespoons unsweetened vanilla almond milk

Directions:

  • Preheat a waffle iron to medium-high heat.
  • Separate the egg yolks from the whites and place them in separate bowls.
  • In the egg yolk bowl, add the milk, butter, and vanilla. Whisk until combined, and set the mixture aside.
  • In a separate bowl, combine the flour, whey protein powder, baking soda, baking powder, sea salt, and erythritol.
  • Fold the dry ingredients into the wet ingredients, stirring just enough to combine them.
  • Beat the reserved egg whites with a handheld mixer until stiff. Peaks from about 3 minutes. Fold the egg whites into the batter.
  • Gently stir in the blueberries.
  • Use a quarter cup measure to pour the batter into the center of the waffle iron. Bake according to your waffle iron’s instructions.
  • Repeat with the remaining batter.
  • While the waffles are cooking, make the frosting:
  • Combine the butter and cream cheese in a bowl and beat with a handheld mixer for 1 minute, or until smooth.
  • Add the vanilla, lemon juice, and lemon zest and beat until combined, about 20 seconds.
  • Beat in the almond milk, 1 tablespoon at a time, until the frosting reaches the desired consistency.
  • Spread the frosting over the waffles. Serve them immediately.
